				<content:encoded><![CDATA[<p style="text-align:center;">Summer time is rapidly approaching and I couldn&#8217;t be more excited. True, I&#8217;ve admitted to fall and winter being my favorite seasons. And they still are. But there are some things about summer that I just love.</p>
<p style="text-align:center;">Hot dogs. Grilling, Fire pits. Long walks without freezing. Icy cold beer. Ice cream.</p>
<p style="text-align:center;">Yes, it is acceptable to eat ice cream any time of year. But really, it&#8217;s the best in the summer time. Slap a few scoops on a cone and I&#8217;m set to go. Even better if it drips and runs down your hand.</p>
<p style="text-align:center;">Last week, I was absolutely dying for some homemade ice cream. That&#8217;s always been B&#8217;s department so I asked him nicely to make some (and by nicely, I might mean nagged to death). And he made the best ice cream EVER! Root Beer Float ice cream. No lie! It&#8217;s got all the taste and flavor of a float but it&#8217;s actually ice cream. It was creamy and delicious and satisfying. If you are a fan of root beer, this is not to be missed!</p>

<p style="text-align:center;">1 cup milk</p>
<p style="text-align:center;">1 cup heavy cream</p>
<p style="text-align:center;">1/2 cup sugar</p>
<p style="text-align:center;">1 vanilla bean, split and scraped</p>
<p style="text-align:center;">1/2 tsp. salt</p>
<p style="text-align:center;">1 Tbsp. root beer extract</p>
<p style="text-align:center;">Combine all the above ingredients in a large bowl. Mix thoroughly to combine. Pour into ice cream machine and mix according to manufacturer&#8217;s instructions.</p>

				<content:encoded><![CDATA[<p style="text-align:center;">Did you know that you are supposed to eat really hot, spicy things when the weather warms up? Weird, right? But I swear it&#8217;s true. On those day when the temperatures has climbed into &#8220;surface of the sun&#8221; range and you feel as though your body has melted into the leather seats of your car, a spicy meal will do you well.  I promise. See, spicy foods make you sweat. And sweat is the body&#8217;s air conditioning system. You sweat to keep from overheating. Basically, you are cooling yourself off. So the more spicy foods, the more sweat. The more sweat, the cooler you&#8217;ll stay.</p>
<p style="text-align:center;">I know. I just spent five minutes talking about sweat&#8230; But really, spicy foods are apropos for summer time. The spicier the better. Spicy, Spicier, Spiciest! This recipe will definitely add some heat to your menu. Bare in mind, a little bit of red pepper flakes go along way. So if you&#8217;re more of a mild fan, adjust the amount of flakes accordingly (1 tablespoon of red pepper flakes = spicier). If you really like to crank up the heat, go ahead and give 2 tablespoons of flakes a whirl. Keep a gallon of milk handy to cool your mouth after!</p>

<p style="text-align:center;">Ingredients:</p>
<p style="text-align:center;">1 box of angel hair pasta</p>
<p style="text-align:center;">1/2 cup vegetable oil</p>
<p style="text-align:center;">1-2 Tablespoons red pepper flakes</p>
<p style="text-align:center;">6 Tablespoons honey</p>
<p style="text-align:center;">6 Tablespoons soy sauce</p>
<p style="text-align:center;">Boil water and cook your pasta according to package directions.</p>
<p style="text-align:center;">Put your oil in a small saucepan over medium heat. Add the red pepper flakes and let cook for about 2 minutes. After 2 minutes, strain the pepper flakes out of the oil.</p>
<p style="text-align:center;">Whisk the honey and soy sauce into the oil.</p>
<p style="text-align:center;">Once you have drained your cooked pasta, pour oil mixture on top and mix well, coating all of the pasta.</p>
<p style="text-align:center;">Refrigerate until cold (overnight works best).</p>

				<content:encoded><![CDATA[<p style="text-align:center;">For the longest time, I couldn&#8217;t get Abby to try any breakfast foods that weren&#8217;t Poptarts. We would have Poptart parties and try tons of different flavors. S&#8217;more (the best, by far), Grape (a universally disliked flavor), Sugar Cookie, Classic Strawberry. You name it, we&#8217;ve tried it. I cannot believe that she doesn&#8217;t HATE Poptarts at this point in life. &#8220;Don&#8217;t you get sick of having the same thing every morning?&#8221; says the gal who&#8217;s been eating red velvet cake flavored yogurt every day for the past three weeks&#8230;</p>
<p style="text-align:center;">Anyway. She&#8217;s moved on since the Poptart phase. Now, we&#8217;re into pancakes, cereal, sunny side up eggs, bacon, french toast. The breakfast standards. And she sort of forgot about poptarts for a while. Until she browsed around on my <a href="http://pinterest.com/kimcooper910/">Pinterest</a> (help&#8230; even an almost 9 year old can&#8217;t stop looking at pins).  I&#8217;ve got a board named &#8220;For Abby&#8221; that is filled with recipes I think she&#8217;ll like, crafts I want to do together, bedroom ideas. Hopefully, she never sees the &#8220;What to tell your kids when they find out Santa isn&#8217;t real&#8221; pin&#8230;</p>
<p style="text-align:center;">Moving on. She saw the pin for homemade poptarts and went bananas. Begged and pleaded and twisted my arm into making them (and by twisted, I mean she asked and I instantly bounced up and down from excitement to make them). I knew right away that I wanted to incorporate Nutella, the chocolate hazelnut spread from the gods. And you&#8217;ll never believe how easy these poptarts are to make. Really. I think you might have to make them yourself, just to be sure.</p>
<p style="text-align:center;">I used Nutella as my filling. Feel free to slap anything inside the poptart. Next time, I&#8217;m planning on putting some marshmallow fluff inside with the Nutella. Then blackberry champagne jam. The options are endless, delicious and fun. And let&#8217;s not forget how amazingly portable poptarts are. Toss that baby in a sandwich bag and you are ready to go!</p>

<p style="text-align:center;">Serves 4</p>

<p style="text-align:center;">1 pie dough (you can use homemade or store bought)</p>
<p style="text-align:center;">Nutella</p>
<p style="text-align:center;">sugar</p>
<p style="text-align:center;">Egg wash (egg whisked with water)</p>
<p style="text-align:center;">Preheat the oven to 350 degrees. Lay a piece of parchment on top of a baking sheet and set aside.</p>
<p style="text-align:center;">Roll out your pie dough into a square. Slice it into even pieces. You&#8217;re going to fold one on top of the other, so make sure you cut out an even number. Slather a piece of the pie dough with Nutella, leaving about a quarter inch around the edges. You can use as much or as little Nutella as you&#8217;d like. Carefully place a slice of pie dough directly on top of the Nutella filled pie dough. Using a fork, press into the edges of the dough to seal. Repeat until you are out of dough.</p>
<p style="text-align:center;">Brush each pop tart with egg wash. Sprinkle some sugar on top. Lay your pop tarts on top of the baking sheet. Bake for 15 minutes until golden brown.</p>

My take on pasta primavera. It&#8217;s just the right thing to eat on a Monday night. What&#8217;s your best way to get through a boring Monday?</p>

<p style="text-align:center;">Serves about 4</p>

<p style="text-align:center;">2 Tbsp. cream cheese</p>
<p style="text-align:center;">3 Tbsp. butter</p>
<p style="text-align:center;">1/2 cup heavy cream</p>
<p style="text-align:center;">1 clove crushed garlic</p>
<p style="text-align:center;">Cook your pasta in a large pot of salted water. While it simmers away, melt 1 Tbsp. of butter in a sauce pan. Add the onion, pepper and tomatoes. Cook for about 5 minutes until onion and pepper are soft and tomatoes have started to break down a bit. Transfer them to another dish.</p>
<p style="text-align:center;">Melt the other 2 Tbsp. of butter in the same sauce pan. Add in the clove of garlic. Cook for about 2 minutes until fragrant. Add in the cream cheese and stir. Once it is a bit melty, add in the heavy cream. Stir it well, incorporating the melted cream cheese. Once the mixture has melted and combined, add in the veggies. Stir well to combine.</p>
<p style="text-align:center;">Drain your cooked pasta and add it to the sauce. Stir well, covering all the pasta with sauce.</p>
<p style="text-align:center;">Serve warm.</p>

<div style="text-align:center;">It&#8217;s actually pronounced Ken-Wah (that&#8217;s the best I&#8217;ll get at phoenetics). It&#8217;s in the grain family. It&#8217;s cute and tiny, is perfect when substituted for rice and has TONS of health benefits. It&#8217;s not the most flavorful food in the world so it does require a little dressing up. But the options are absolutely endless. If you are in a southwestern mood, you can throw in some black beans, a little salsa and some queso fresco. And if you want something Mediterranean, crumble up feta, chop a few tomatoes and cucumbers and Voila! Really, there are no limits to what you can do with Ken-Wah (once more, for emphasis).</div>

It was simple to make on a lazy day. 4. The ingredients and name promised simple yet delicious flavor.</div>

<div style="text-align:center;">1 cup quinoa</div>
<div style="text-align:center;">2 cups vegetable stock</div>

<div style="text-align:center;">Bring your veg stock to a boil. Add the quinoa and reduce heat to low. Let simmer, covered, for 20 minutes. After 20 minutes, uncover and stir in the Parmesan cheese. Serve warm.</div>

<p style="text-align:center;">Abby&#8217;s First Holy Communion is this Saturday. And so this week has been filled with communion practices, CCD classes, softball, Girl Scouts and a million other activities for her. At home, it&#8217;s more of the same. We&#8217;ve got family coming in from out of town which means cleaning, mopping, de-dog furring, baking, cooking, panicking.</p>
<p style="text-align:center;">On the 19th, we&#8217;re having her party. And until then, I&#8217;m up to my elbows in scrapbook paper, sewing garlands and cement gluing utensil holders. Going overboard, you ask? Yes. I can&#8217;t help myself. Besides, I get to park myself in front of the couch and sew garlands while watching seasons 1 and 2 of Vampire Diaries without even coming up for air. Win/Win.</p>
<p style="text-align:center;">Because of the hectic conditions around here, we need fast dinners. Enter, pizza pinwheels. Not only are they cute and delicious, they are also the fastest and easiest dinner on the planet. They keep well for the next day&#8217;s lunch and&#8230; ready for the bonus? They&#8217;re &#8220;skinny&#8221;. Each pinwheel is only 115 calories! It doesn&#8217;t get any better than this.</p>
<p style="text-align:center;">Pizza Pinwheels</p>
<p style="text-align:center;">From <a href="http://dashingdish.com/recipe/super-skinny-pizza-pinwheels/">Dashing Dish</a></p>
<p style="text-align:center;">makes approximately 15 pinwheels</p>

<p style="text-align:center;">Ingredients:</p>
<p style="text-align:center;">2 cans of refrigerated crescent roll dough (original recipe recommends using seamless but I managed fine without it)</p>
<p style="text-align:center;">1 cup pizza sauce</p>
<p style="text-align:center;"> 2 tsp. Italian seasoning blend</p>
<p style="text-align:center;">1 tsp. garlic powder</p>
<p style="text-align:center;">1/4 cup parmesan cheese</p>
<p style="text-align:center;">1 cup mozzarella cheese</p>
<p style="text-align:center;">Preheat the oven to 350 degrees. Line a baking sheet with parchment paper.</p>
<p style="text-align:center;">Roll your crescent dough out flat. If you are using non-seamless, you&#8217;ll have to press all of the seams together to make one coherent piece of dough. Roll it out to make a large rectangle. Repeat with the second can of dough.</p>
<p style="text-align:center;">In a bowl, combine pizza sauce, seasoning, garlic powder, parmesan and mozzarella cheese. Spread half the mixture evenly on the first piece of dough. Repeat on the second piece with the remaining mixture.</p>
<p style="text-align:center;">Slowly roll the dough into a skinny log, sort of like a cinnamon roll. Repeat with the second dough. Slice into even pieces (I got about 8 slices each log).</p>
<p style="text-align:center;">Place the rolls on your baking sheet. Bake for about 15 to 17 minutes until golden brown.</p>

And by chicken salad, I mean chunks of chicken slathered with mayonnaise and maybe some celery tossed in there for good measure. To me, in my young age, it was a delicacy. The best of the best.</p>
<p style="text-align:center;">Then I grew up and realized that it was barely even considered chicken salad. I learned that there was more to it. Chicken salad can be so much more than just mayonnaise. You can dress it up any which way you want. My new favorite? Harvest-style chicken salad. Some grapes, apple cider vinegar, celery. Some people put raisins or craisins. It completely transforms chicken salad. The tanginess of the vinegar and the sweet-sour taste of the grapes really make the flavors come alive.</p>
<p style="text-align:center;">Serve this at your next party. I promise, there will be no leftovers.</p>

<p style="text-align:center;"><span style="font-family:Times New Roman;color:#000000;font-size:medium;">- ½ cup mayonnaise</span></p>
<p style="text-align:center;"><span style="font-family:Times New Roman;color:#000000;font-size:medium;">- 1 tsp. dill</span></p>
<p style="text-align:center;"><span style="font-family:Times New Roman;color:#000000;font-size:medium;">- 1 tsp. apple cider vinegar</span></p>
<p style="text-align:center;"><span style="font-family:Times New Roman;color:#000000;font-size:medium;">- 2 stalks celery, diced</span></p>
<p style="text-align:center;"><span style="font-family:Times New Roman;color:#000000;font-size:medium;">- 10 to 12 grapes, halved</span></p>

<p style="text-align:center;"> In a large bowl, combine chicken, yogurt, mayonnaise, celery and grapes. Pour in apple cider vinegar and stir well to combine. Sprinkle dill on top and fold in. Add salt and pepper to taste. Serve cold for best taste.</p>

<p style="text-align:center;">If you see this dog, do not feed her. Do not give her chicken nuggets, french fries, pupperoni or anything else delicious and rewarding. Also, do not scratch her behind the ears or on the lower back. In fact, if you see this dog, you probably should avert your eyes so she doesn&#8217;t draw you in.</p>
<p style="text-align:center;">This dog here, she&#8217;s in big time trouble. It&#8217;s baby bunny season here in Maryland and she is taking full advantage. She&#8217;s caught 3 baby bunnies in one week. One had to be covered with a barrel until B came home to handle. One was found on the living room floor. Whatever, it is her nature. I can&#8217;t fault her for using her instincts.</p>
<p style="text-align:center;">But the third? The third&#8230; that one is something that she is in serious trouble for. She went after the poor thing in the yard, cornered it, pawed it and picked it up in her mouth before B caught her and put her inside. Poor baby bunny was very much alive when I picked it up and set it down out front. I&#8217;m currently hoping that cute baby will be ok.</p>
<p style="text-align:center;">So remember. This dog = trouble.</p>

<li style="text-align:center;">2 cups rolled oats</li>
<li style="text-align:center;">1 1/2 cups butter, melted</li>
<li style="text-align:center;">2 teaspoons baking soda</li>
<li style="text-align:center;">1 jar caramel ice cream topping</li>
<li style="text-align:center;">1 bag milk chocolate chips</li>
<li style="text-align:center;">1/2 &#8211; 1 teaspoon sea salt</li>
</ul>
<p style="text-align:center;">Preheat the oven to 350 degrees. Stir together flour, oats, buter and baking soda in a bowl.</p>
<p style="text-align:center;">In a 13 X 9&#8243; baking dish, press half the oatmeal mixture into the bottom. Bake for ten minutes. Remove from the oven and top with the chocolate chips. Pour the caramel sauce on top of the chocolate and sprinkle with salt.</p>
<p style="text-align:center;">Crumble the remaining oatmeal mixture on top evenly. Return to the oven for 15 minutes. Allow to cool completely before slicing into it.</p>

<p style="text-align:center;">Yep, that&#8217;s about as exciting as pasta usually gets around here. I don&#8217;t know about you, but I need more options. Some variety. A new taste. When I stumbled across this peanut pasta, I figured it was worth a shot. The idea of peanut butter mixed with pasta intrigued me and grossed out everyone else in this house.</p>
<p style="text-align:center;">Luckily, it was a hit! I took it for leftovers for about a week. The flavors were different from anything I&#8217;ve had before. It was salty and sweet and delicious. Try it if you&#8217;re in a pasta rut!</p>

<li style="text-align:center;">1 teaspoon minced ginger</li>
<li style="text-align:center;">1/3 cup peanut butter</li>
<li style="text-align:center;">1/4 cup soy sauce</li>
<li style="text-align:center;">1/4 cup hot water</li>
<li style="text-align:center;">1 tablespoon cider vinegar</li>
<li style="text-align:center;">1 teaspoon white <a href="http://allrecipes.com/Recipe/Peanut-Noodles/Detail.aspx#" rel="nofollow">sugar</a></li>
<li style="text-align:center;">1/4 teaspoon crushed red pepper flakes</li>
</ul>
<p style="text-align:center;">In a large pot, bring salted water to a boil. Add the pasta and cook until al dente.</p>
<p style="text-align:center;">While the pasta cooks, pour oil into a sauce pan and heat over medium. Add ginger and cook for 1 minute. Add the peanut butter, soy sauce, water, vinegar, sugar and pepper flakes. Stir well to combine.</p>
<p style="text-align:center;">Add the cooked, drained pasta to the peanut sauce and toss well, coating in sauce.</p>
<p style="text-align:center;">Serve warm.</p>
